I'm newly playing Knytt Stories, however when I load a level, I seem to be missing all of the ground textures and, barring an encounter with lava or water, I fall indefinitely.  The various creatures don't seem to be affected.

How can I fix this?

Well that's odd. I think you should reinstall Knytt Stories; your Data folder might be missing.

I have the data folder, and in it there's the Data folder with Ambiance, Gradients, Music and Objects folders.

Edit: ...Solution, you did have the right idea, I was missing the Tilesets folder.  But I got it now, thanks.

I don't understand how the tileset folder could affect lava like that.

Lava is not in the tilesets but in the objects directory. If the tilesets directory is missing, you won't see the ground, but lava will be something you'll see.
