This could turn out cool. I don't enjoy bosses in any game much, they're frustrating to me. But I enjoy any level that's fun and creative, and good bosses are hard to pull off, so if this is good it will be very impressive to me.
As for ideas, maybe a battle against the wizard from the underwater swamp tileset?

Clean up the grammar, clean up the graphics (mainly in the first screenshot) and it'll look a lot more interesting.
